Summer Squash

I made the most amazing dish last night. If you have an abundance of yellow squash you must try this!

Spicy Summer Squash

5 Yellow Squash (sliced thin)
1 small red onion (chopped)
1 Jalapeno (chopped without seeds)
3 TBL Coconut Oil
1 15.5 oz can of White Beans
Salt and Pepper to taste

In a pan over medium combine all ingredients except the beans. Cook until mixture is soft. Then add the beans and cook for another 10 minutes!
