Vegan Caprese Salad

Every summer I make Caprese Salad and this summer was going to be no different. I found a great idea on line to substitute the cheese for tofu so I tried it and it was amazing!

What you need:
Heirloom Tomatoes (the more colorful the better)
1 bunch of fresh basil
1 package firm tofu
Extra Virgin Olive Oil
Balsamic Vinegar
Salt and Pepper

Slice tomatoes and place in dish. Top with tofu slices and basil leaves. When ready to serve sprinkle with balsamic vinegar and extra virgin olive oil, salt and pepper.
